Ingredients:
1 1/2 cups frozen riced cauliflower
3 oz. cooked and chopped skinless chicken breast
3 tbsp. whipped cream cheese
2 tbsp. salsa verde (tomatillo salsa)
1 tbsp. chopped fresh cilantro, or more for topping
1 tsp. taco seasoning
Directions:
Place cauliflower in a medium microwave-safe bowl. Microwave for 2 minutes, or until hot.
Drain excess liquid. Add remaining ingredients, and mix well. Microwave for 1 1/2 minutes, or until hot.
MAKES 1 SERVING
