This super-savory, slightly spicy, mega-delicious vegetarian chili will warm you up on a chilly night!

Prep: 15 minutes
Cook: 3 - 4 hours on high or 7 - 8 hours on low

Ingredients:

One 28-oz. can crushed tomatoes

One 15-oz. can pure pumpkin

2 tsp. chopped garlic

1 1/2 tsp. cayenne pepper

1 tsp. chili powder

1 tsp. pumpkin pie spice

1/2 tsp. ground cumin

1/4 tsp. salt

2 cups chopped portabella mushrooms

1 1/2 cups chopped zucchini

1 1/2 cups chopped onion

One 15-oz. can chili beans (pinto beans in chili sauce), not drained

One 15-oz. can black beans, drained and rinsed

One 14.5-oz. can diced tomatoes

1/2 cup canned diced green chiles

Optional seasonings: additional cayenne pepper and salt

Optional topping: light sour cream

Directions:

In a slow cooker, combine crushed tomatoes, pumpkin, garlic, and spices. Mix well.

Add all remaining ingredients, and thoroughly stir.

Cover and cook on high for 3 - 4 hours or on low for 7 - 8 hours.

What's more comforting than a big pot of homemade applesauce? This fruity side dish has the perfect balance of sweet and tart, thanks to a mix of Fujis and Granny Smith apples!

Prep: 10 minutes
Cook: 2 1/2 hours

Ingredients:

4 cups peeled and sliced Fuji apples (about 4 medium apples)

4 cups peeled and sliced Granny Smith apples (about 4 medium apples)

2 tbsp. cornstarch

2 tbsp. Truvia spoonable calorie-free sweetener (or another natural brand that’s about twice as sweet as sugar)

2 tsp. lemon juice

2 tsp. cinnamon

1 tsp. vanilla extract

1/4 tsp. salt

1/8 tsp. ground nutmeg

Directions:

Place apples in a slow cooker sprayed with nonstick spray.

In a medium bowl, combine cornstarch with 3/4 cup water. Whisk to dissolve. Add all remaining ingredients. Whisk well.

Pour cornstarch mixture over apples, and stir to coat.

Cover and cook on high for 2 1/2 hours, or until apples have completely softened and liquid has thickened.

Thoroughly mash and mix.
